
I don’t do ‘it’s January, let’s diet’, so if you want an incredibly indulgent and quick piece of Heaven, this is the one. Having said the I don’t diet thing, I should say that this treat is in the ‘rare treat’ category.
Flaky, buttery croissants are hard to improve on, but splitting them and filling them with a caramel-filled chocolate, or a mixture of dark chocolate and marzipan and then popping them in the oven to heat. Well. Need I say more?
Of course I can say more. I have no problem with that.
So, Merry Christmas and a very happy, healthy, prosperous New Year to you all. Yes, very slightly delayed, but can you believe I am still readjusting from Christmas? It was such a lovely, busy Christmas and we were out so much with Alex afterwards, that when he went back to school this week, there were a lot of outstanding jobs to do.
I haven’t done a great deal of sitting down. This is also not a bad thing; despite eating more treats than any human should over the festive period, I haven’t gained an ounce!

Are these muffins or are they cupcakes? I’m not sure. Let’s say they’re a cakey muffin that keeps well and gets stickier as time goes on. It is such a quick recipe with a great reward in terms of taste and texture and easy enough to get the kids helping with too.
We have decided that they can take quite big chunks of chocolate in them, but a mixture of chunks and chips is nice. I’m thinking they could take a filling too, but haven’t decided which direction to go with on it. Hmmm. These are so nice – do give them a go.

I’ve wanted to make American ‘chocolate pudding’ for ages because the ‘pudding mix’ is used extensively in baking and we don’t have it over here. There are hundreds of recipes for pudding from scratch, but I settled on one from ‘Diner Desserts’. It’s actually a section of the recipe for Chocolate Cream Pie. It’s so rich, I can’t imagine a slice of it with cream on top, but you know… never say never.
Describing it isn’t as straightforward as it seems. I was expecting a set chocolate custard, but it wasn’t that, nor was it blancmange. Somewhere between blancmange and ganache and deeply, deeply pleasing. The most fun I’ve had with a whisk for ages. Probably.
